Cured with salt and typically aged (air dried and chilled) between one and two years, this Italian delicacy wants to be sliced paper-thin and eaten on its own. The longer the meat is aged, the drier, darker, and more concentrated in flavor it gets. A 24-month prosciutto will have more funk and complexity than a 12-month. Sent overnight with a chill pack. Great for Auckland area, but check other destinations. Being an air dried product makes it acceptable to ship nationwide. Subject to availability.
