Mortadella is a large, slow-cooked
salume (Italian cured meat) made from finely hashed or ground cured pork mixed with cubes of hard pork fat.
Originating in Bologna, Italy, it is the traditional, high-quality European ancestor of American bologna sausage.
Pork meat: Finely whipped into a silky, smooth, pale pink paste.
Pork fat: Incorporates at least 15% distinct white cubes of firm neck fat (lardelli) that add a melt-in-the-mouth texture.
Flavorings: Traditionally seasoned with whole black peppercorns, myrtle berries, and spices like nutmeg and coriander.
Add-ins: Modern versions are often studded with whole pistachios or sometimes olives and truffles.
The spiced pork emulsion and fat chunks are stuffed into a large casing and slow-cooked in dry-air ovens for several hours until fully cooked. It is then rapidly cooled with a cold shower before being sliced.
