Roger Dutruy's specialties, experience and total knowledge of the production process (from the live snail to the finished product) are the guarantee of high quality, technical and taste products. Our snails are of the "Hélix Pomatia Linné" breed, the only breed entitled to the name "Escargots de Bourgogne". This variety is recognised as the noblest and tastiest.

Snails are harvested alive in the spring, in nature (they do not come from a farm).
