Low or no sulphite, great if you have a sulphite allergy and get a blocked nose, flushed face and headache - instant hangover. These biodynamic wines are organic which means no additives. Natural yeast and sulphites occurring naturally in the process gives the low/no sulphate (<30mg per 1L), a lot of other wines have Artificial yeasts and sulphates added and can contribute to the allergic reaction found by some people.

The name “Passito” comes from the Italian word “appassimento,” which translates to "withering." The drying process concentrates the sugars in the grapes, leading to wines with higher alcohol content, sweeter flavor, and tannins. This has produced a beautiful deep flavoured wine, sweet initially due to the appassimente process, soft elegant, not tannic. Extremely fruity black fruits & berry, syrupy notes. an easy to drink earthy beautiful coloured drop. Great as a dessert wine.
